It’s that time of year again. Or rather, it’s that time of year that makes one suggestible to the slightest mention of comfort food!
A few months ago, I had a great grilled cheese sandwich at Michael Smith’s in KC. It had a white cheddar, arugula and fig jam. That sandwich eaten with their homemade soup was divine! I see they’ve taken it off the menu.
At home, I make a similar sandwich minus the fig jam and put it in the GF Grill. I tried making my own fig jam–it was okay. And then I thought, why not pepper jelly jam to echo the arugula? We make huge batches of pepper jelly every year.
What do you know–success!
Recipe (I feel a bit silly for writing this):
- 2 slices of your favorite whole grain bread–something with a nice texture!
- 2 slices (or however much cheese) of a nice, sharp cheese. I use white cheddar.
- Arugula (I use “lots”)
- Pepper jelly
In this order: bread, pepper jelly, cheese, arugula. Do the same to another slice of bread, put it together and pan grill or use one of those panini-type presses. When bread crisps and cheese melts, you have a winner!
